Dancing Jalapeno Slow Cooker Apricot Chicken

Short on time.  The Slow Cooker Apricot Chicken is perfect.  Put all the ingredients into your slow cooker and 3-4 or 7-8 hours your have a delicious dinner ready to go.  It is a huge tasty dish.
 
Ingredients
6
bone-in or boneless - skinless chicken thighs

salt and pepper to taste
1 cup
apricot Dancing Jalapeno Fruit Spread (or cranberry, peach, mango, pineapple or marionberry)
2 tsp.
olive oil
1
onion, thinly sliced
1 tbls.
soy sauce
1 tbls.
Dijon mustard
1 tsp.
minced fresh ginger
2 tbls.
chopped parsley
 
Method

In a small bowl, wish together apricot Dancing Jalapeno Fruit Spread ,soy sauce, Dijon mustard and ginger. Set aside.

Heat olive oil in a large pan over high heat. Season the chicken thighs on both sides with salt and pepper.

Place the chicken thighs for 4-5 minutes each side until deep golden brown.

Add onions to the pan with the thighs and cook for 5 minutes or until the onions are soft.

Place the chicken thighs and onions in the slow cooker.

Pour the apricot sauce over the chicken and onions.

Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.

Sprinkle with parsley and serve.
