Dancing Jalapeno Dark Chocolate Truffles

If you like chocolate and a little heat, you will love this truffle. The earthy, roasted aroma of the jalapeno tames the bitterness of of the dark chocolate and melds together to create a smooth and creamy chocolate experience with a pop of heat.
 
Ingredients
6-8 oz
60% cacao chocolate
5-6 tbls
Dancing Jalapeno Fruit Spread (apricot, mango, peach or pineapple)
2 oz
Heavy cream
 
Method

Chop the chocolate into fine pieces using a sharp knife. Put chocolate in a medium bowl.

Pour the heavy cream into a small saucepan and place on medium heat until it just begins to bubble.

Add the Dancing Jalapeno Fruit Spread and stir until incorporated. Bring mixture back to a simmer and remove from heat. Pour immediately over chocolate and let sit for one minute.

Stir chocolate and cream together until mixture is smooth and glossy. At this point the mixture should be smooth looking and thick. If mixture appears to be too soupy chop and add more chocolate to the mixture. Once the consistency is a thick mixture refrigerate for at least one hour.

Ganache should be firm, a little softer than fudge. If mixture is still too soft melt chocolate over a pan of water and add more chocolate. Ganache can be refrigerated overnight to allow to set as well as letting the flavors develop and meld together.

Use the larger end of a melon baller to make truffles. Roll to make edges round and place on a cookie sheet lined with parchment paper. Chill for 30 minutes. Once set roll in a cocoa powder and other preferred toppings such as nuts or coconut. This elegant and chocolaty morsel will surprise your guests and leave them wanting more. ​
